Today I wanted to share one of my favorite appetizers to make and take along to holiday parties! It’s super quick and easy to make and everyone always loves them!
There are probably 97825983274 different ways to make these, but I’m telling you, I take the easy route pretty much every time I make these. Bonus, I can usually find all of the ingredients at Aldi!
2 blocks of cream cheese
1 package of dry ranch dressing
1 can of tomatoes and green chilis (you know, like Rotel!), drained
1 package of large tortillas
I start by softening my cream cheese (by leaving it at room temperature for a bit) because then it mixes better. Then I add the packet of dry ranch and the can of tomatoes and chilis, don’t forget to drain the can first! I just dump everything into my giant Kitchen Aid mixer and use the paddle attachment to mix everything up! Like I said, I like easy!
Once everything is mixed up, I get out my large cutting board and tortillas. I like to cut the edges of my tortillas off to make them a bit more rectangular, I feel like I waste less when filling them. I do this quickly by using my pizza cutter!
Spread a thin layer of the cream cheese mix across the entire tortilla (all the way to the edges!) and then roll that tortilla up!
I usually stack all my rolls on a plate and pop them in the fridge to chill a bit before slicing. Once they are chilled, I slice them up and lay them out on my fancy Christmas tree tray. These roll ups taste great plain or served with salsa! And this recipe is easily doubled depending on how many you need to make!
